Looking for Bear Recipes
« on: December 18, 2019, 11:53:56 AM »
Anyone have any good or favorite recipes for cooking bear? I was fortunate enough to harvest one this year. Made some "Beer" chili so far (half bear meat and half deer meat) - was pretty good. I have steaks, stew, roasts and ground meat to try out.

Smoked roast is good. It’s plenty fatty to not dry out.  You can cure like a ham and smoke.  Low temp.   Had a friend do a whole rear leg on the bone a few years back. Was amazing but you need a big smoker for that.

i do not have measurements, i just go by sight sorry, most imp is about half cup brown sugar then add the soy and teriyaki until the liquid breaks down most of the sugar

I'll have to look up some recipes for ya, I usually do a lot of bear burgers,  fresh sausages and stews, but you cant go wrong with the " chicken fried steaks"  trim, pound with meat hammer, flour, dip in milk/egg and re flour, fry in olive oil. So delicious!!!!

Lots of great big game recipes from Steve Rinella from "The Meateater "cook book.  Hank Shaw has an awesome cookbook as well, called "Buck, Buck, Moose".  I like having the print copies, but you can find everything & more online as well.  I've done several recipes from each and they've all turned out amazing, including utilizing some things for meals that I typically would have just thrown in the grinder, like making venison ribs (so good) and using the shanks for osso bucco.  Did a bear ham and a venison ham in the smoker and they were amazing.  Ate it cold for days following the main meal.  Been trying to keep the wife and kids from getting bored of the same old steaks and ground meat in chilis (not that chili ever gets old, in my opinion, lol).  Lots of good roast recipes, including a bone in shoulder roast which is another item I would typically grind in the past.  Many of the recipes are interchangeable with various types of meat.  Pay attention to the details and your table will soon look like Ziffy has been preparing you meals!

I like to cook a roast in the crockpot with dry onion soup mix, beef broth, cream of mushroom soup  Worcestershire, potatoes, carrots and some celery.  Make sure you removed all the fat from the roast.   Pm me if you need more info.
