Smoked Bear Ham

Made a Bear Ham last week for Thanksgiving .... turned out pretty good following https://youtu.be/4v-johKZk28?si=ykzPoqqT1wgMBrFf ... sliced what was left into sandwich meat ..... being that I deboned the leg and had smaller cuts next time id Brine it for half the time like 2 days .......

Looks great!  I usually do one of these every year.  Sometimes a bear sometimes a deer.  This year it was an entire boned out venison hind quarter. Turned out amazing.  Enough to enjoy right away (its great cold with cheese and crackers), send both kids back to college with a big piece and put some in the freezer that I'll use in the spring to make a big batch of potato ramp soup.
