looks great--- how come you don't keep the heads on so you can eat yhe cheek mussel?  IMO the best part of the trout!   (BBQ)

Nothing new here .. just want to share my Fried trout .... Salt and Pepper the cavity ... fill with a lemon slice and some fresh herbs then tie with some twine to keep closed ... I used a sprig of oregano, rosemary and sage. In a cast iron pan with butter and olive oil on medium high to medium heat cook each side for 5 minutes for a total of 10.
Proud supporter of catch, keep and EAT.
