Looks good.  I've been making Osso Bucco with mine, from Steve Rinella's Recipe out of the Meateater cookbook.  Can't believe I used to grind them.

I’ve done the Osso Bucco also. It’s one of my favorites. This year I was rushing and didn’t cut them into 1 1/2” pieces. So I went this route.

That way you can braise them in "oneshot"!!! (santa) . . . . lookin' good!
