I have eaten both -  I fillet big sea robins, you don't get that much meat off of them when you fillet them but they aren't bad eating at all.
I use to eat dogfish and I loved them - I would slice them up the spine take out the 2 strips of meat along the spine like a back strap.
Then a learned that they don't have a bladder. which means they secrete there urine through there meat and out there skin. It doesn't have any factor on the meat guilty but the thought ruined it for me.
Thresher and Mako have bladders.

Grilled miso-soy glazed dogfish . . . If you soak the dogfish in a light vinegar solution for a few hours, it negates any urea from the flesh . . .also Excellent! . . .almost like swordfish in texture . . .

Do you use the blackfish jigs at all? I feel you get better hook sets but if your fishing deep water you need the heavier weights with traditional rig

I prefer using the snafu rigs that I make for blackfish. . . It features two(2) hooks in each crab to increase the chance of a hook up!! . . . works for me. . . and cheaper than buying the blackfish jigs!
