yes, I slit the skin around the neck, then grab it with crimper pliers and pull the skin right off of the body, then gut it. then fillet. I usually bread the meat in standard breading or panko and fry it, but it can be baked like any other fish depending on preference . . . they are actually good tasting, but I only keep good sized ones to make it worth the effort
